Bought some marrow bones a couple of days ago. Plan to roast it, serve it on toast with a cilantro/shallot salad. Never done it before, any tips?

450 for 25-30 minutes on a sheet pan, nothing fancy. Long ones should be cut down the long axis by the butcher for maximum surface area. Knife it out to use as a meat jelly on crusty bread, sprinkle with flake sea salt and cracked pepper. Serve with a light green salad with something akin to a vinaigrette. The acidity from that should balance out the fatty/salty part of the bone marrow. Pair with a full bodied wine.
