Coming from the E-2 guy? Pot, kettle, etc. etc.
As @SlickAg notes, I was an E-2 pilot, and specifically an E-2C- pilot. While the back was Star Wars level stuff (so they said...I only went in the back to use the head), they had no money left over for front office furniture. Here was a picture of our cockpit panel.

At some point they added Velcro so you could stick your smartphone up there.

I hear it's improved with the E-2D.

That's technically not required for a splash-lubricated engine. Pressure lubrication and oil pumps weren't invented until after @taxi1 retired.

Besides, the only instrument a naval aviator needs is angle of attack. :D

And only one RPM gauge for two engines! was never sure which one it was.
Maybe it would have a switch, like the main/aux gas gauge switch on some old 1950s Beechcrafts. (Imagine the lawyers shitting themselves about that in this day and age, "It's not my client's fault he ran out of gas by being too stupid to flip the switch for the fuel gauge when he swapped tanks with the fuel selector.")

I seem to recall having to hold in a switch to read the amount in the drop tanks of the TA-4.. but it’s been a long time so not 100% sure.

Your memory serves you correctly. Section 2.3.4 of the TA-4F/J NATOPS states: "External fuel tanks quantity is checked by depressing and holding
the external fuel button."
