what exactly do you do in contact,FAM'S, and RI's? and why are some of the stages so much more difficult than others?

Contacts and FAMs - the same thing. This is where you will get FAMiliar with the T-34 doing basic maneuvers, learning course rules, emergency procedures, etc..

RIs - Radio instruments, this is where you learn to fly from point a to b using instruments.

Need more info ... you know what to do...

Difficulty of each stage depends on the SNA, each has their own opinion on which part is more difficult.
