Departing for some alcoholism training in NOLA tonight, and I'll continue on my way.

As it stands right now, I'm planning on spending a good 4-5 days in/around Albequerque with my relatives. My cousins are pacifist, vegetarian, sierra club losers, and my uncle is stoked to have me drop by. He took his 'boys' hunting a few times, and they both cried each time. I'm not sure what's in season, but we're going to spend the time sending animals to meet their maker. Of course, this is all dependant on him not being sent to parts undisclosed for work, which happens on a fairly regularly. If it falls through, I'll have to adjust a bit, but I've got some good leads thanks to you folks. If I bag anything, I'll give you all first dibs on jerky. Mmmmmm....SQUIRREL...

Send them to their maker, and send me the jerky :icon_smil

Close ... my slo-o-o-o-o-o-o-ow cooked BBQ country-style pork ribs would come in slightly ahead of your generic Texas BBQ.

And Texas doesn't have the advantage of my BBQ beans .... or my wife's potato salad .... or my macaroni salad. Otherwise ..... :)

All I know is that Jacksonville doesn't have any good BBQ (that I've found.) This pork sh!t just doesn't cut it. For me its Texas brisket, guess I'll just have to learn to make my own.

Smoker= worthy investment for wantabe amature BBQ'er? my SLOW cooking of ribs takes about 3-4 hours on a *gasp* gas grill...though indirect heat with water baths for humidity. Makes them nice and juicy...now Im hungry...damn it!

anyway...I think I'm up for crowding my small patio with a new smoker.....I love love love smoked Salmon as well!

Some people go to so much trouble. I cook my ribs in the oven (finish on the gas grill) and they're better than anything I've had in a BBQ joint. :D

For ya'll stationed in Meridian, anyone ever been to Dreamland in Tuscaloosa? They also have one in Birmingham. Not as good as some of the BBQ I've had in KC, but still some of the best BBQ I've ever had. :tongue2_1

Went to Dreamland in Tuscaloosa while in Primary. Good stuff.
