Whats the story on Sierra flying with ESSS with nothing loaded. Is this just a convenience and mission flex in case a payload/ordinance is needed later?

Taking those things off is time-consuming. It’s very common to have them installed for missions where the extra weight, drag and proximity to the hoist are detrimental.
