Here are a couple of quick ideas for healthy foods that are easy to make:
1. Baked Potato a la:
- Pesce. Bake the potato, split it in half, put some tuna fish on top, with a touch of cheese. Back in the microwave for 35 seconds.
- Fundicchio. Bake the potato, split it in half, put some broccoli and cheese on top. Back in the microwave for 20 seconds.
- Pollo. Bake the potato, split it in half, put some slices of chicken lunchmeat, or the chicken chunks, plus a little cheese. Back in the microwave...
2. Your vegetables. Always need those. In the frozen foods section you can by the microwaveable pouches - 99cents. Quick, easy, healthy, and little mess.
3. Soups. Making soup is surprisingly easy, and you can make a big pot on the weekend, then use it as meals throughout the week. Water, vegetables, and any kind of meat that you want (chicken breast, precut stew chunks, fish, etc.), plus the following spices are pretty standard: salt, pepper, parsley, sage, basil, and bay leaves. Takes about 15 minutes to cut the vegetables and season the soup, then let it cook for about 3 hours.
