Does the navy ever switch up a career on a guy? Is there any possiblity I could sign up to go NFO and find myself doing something else?

With the above exception, no. You will find yourself in other jobs than just flying on occasion. You will remain on a NFO career path, however.

So I take it then once you sign NFO and complete the training that is what you do for a living with virtually no exceptions?

How much actual flying does a navy flight officer get in? Do they ever get stick time??? What other duties could a NFO find himself doing while not flying?

Where on Earth does a person learn such a divine and gentlemanly a conduct as that zab1001???? Could this be in the Navy?? Tell me, does everybody conduct themselves with such esteme in the Navy??? You may not like how he said it, but I've got news for you: The military is made up of hundreds of thousands of people, each with different personalities. You are not going to like how some people present their information. Sometimes, you want to rip their heads off. Well, too bad. You can't. ESPECIALLY when they have a higher rank or billet than you. That's just the nature of the beast. There's nothing you can do about it, and you will get yourself in a lot of trouble if you respond to those types the way you just did.

Not chastising you, just trying to keep you out of hot water. Do yourself a favor and be careful about how you respond to others in the future.
