Using GI Bill for Flight School?

I haven't flown in 4+ years, and when i left as an IP from VMFAT-101 in 2013 with 1500+ F/A-18 hours, like an idiot, I didnt get any of my equivalency qualifications. I technically don't even have a PPL.

I find myself with a few months off before starting full time work in January, and am considering getting a bunch of flight certificates knocked out. I have no intention of going to the airlines, but aspire to own a plane at some point in the next few decades to fly my family around Texas.

Anybody have experience using the GI Bill for flight benefits? Any school recommendations in Dallas? Where do I even start?

I think your mil equivalency is good for life. Take the mil equivalency test. Talk to a FSDO or DPE. You should get CPL airplane Single and multi engine land (centerline thrust restriction) Instrument Airplane.

You can later take the Mil instructor equivalency and get CFI instrument airplane and multi engine land.

Get the Shepard Air gouge for commercial military equivalency then take the test at a testing center then go to a FSDO with your NATOPS jacket and test certificate. It's an easy test, I studied 3-4 hours with the gouge.

All Mil Competency is good for life. Do the Sheppard test prep. Then go visit your favorite FSDO - Sheppard will give you contacts by name in various FAA Regions.

Then you will need a Medical Certificate. Then start getting access to an aircraft where you can get your Flight Review and Instrument Proficiency Check. Then have fun.
