I'm a Navy SNA final select attending OCS in May and I have my degree in Economics but have always been interested in getting an engineering degree. I was just curious as to when during a pilot's career would it be possible to take classes for an entire semester? Is the only option applying for the post-graduate school during shore duty, or are there other options and timeframes available to take classes?

If you want to go full time, there are options (NPS, TPS, Olmstead Scholarship, and a bevy of named and/or funded programs) you can apply for down the line. Seems to me all except IGEP are for after first sea tour, at the earliest.
Night school on a shore tour seems a pretty popular way to do it, and there are plenty of good online programs that make it possible to even do graduate work at sea.
The impact on your career for the various options varies, but is gennerally considered to be non-trivial.
Then again. . .this is all a bit down the line for you. Get wings first.

Get your masters in whatever the hell you want on your shore tour if you want to make a career out of the killing business, otherwise, concentrate on getting into the fraternity numero uno, then and only then read about Dirac's delta function and matrix analysis of framed strucures and CFD...

A Masters is a great idea but keep a couple things in mind.
While not required for promotion yet it probably will be during your career.
JPME takes some time to complete too so how much school do you really want?
FWIW, when I got commisioned very few dudes got a Masters. Now I am the odd man out without one. Same thing for JPME. It was not required but now is required for command screening. Boards use these type of things to screen even though they are not "required."
You will have plenty of opportunities for school both voluntary and voluntold. Requirements will change so keep your eye out for the changes. Choose wisely unless you enjoy using all your spare time in class.
