So for history sake, when did people start only putting leather patches on the G-1 instead of embroidered patches?

Not sure, but late 90s through 2010s and I never once saw a Fighter - Strike / Fighter aircrew with regular patches on their leather jacket.

I was flying through Whidbey to AK once and saw a P-3 dude with some on his, but that is the only example I can think of.

That tracks about with what I saw, with the first one I saw at Whidbey in the late '90's worn by a former VF guy who had his on since the early 90's. After that only a few folks would still put the older-style 'standard' leather nametags on their leather jacket and fewer still the embroidered patches.

Yes, the nice leather patches on the leather jacket seemed to become more common in the mid-2000s; really depended on how fast a squadron could get them. During my AD VF/VFA career (late-90s through last 2000s), it was mostly clean / unpatched leather or at most a nice leather name tag on them.
