Quite possibly one of the funniest things I've ever seen

If you replace the word funniest with the words "most unfunny and not interesting in the slightest," then I think it is much more applicable to that video:

"Quite possibly one of the [most unfunny and not interesting in the slightest] things I've ever seen"

How can you not find that humorous? Those guys are hitting the water at 40+ mph, that is damn funny. Maybe it's just my stupid sense of humor...
 
Now, if the guy hit a parked car at 40mph, while spoofing Napoleon Dynamite, and there was a dancing cat in the boat...THAT would be funny!

Yeah, not that funny. I've hit the water much harder and faster slalom skiing; sometimes it hurts, sometimes it doesn't.
 
Funny = "Intended or designed to amuse"

Hitting the water at 40mph = Hitting the water at 40mph...
