Anyone know where to buy the freshest fish and the best shrimp in Pensacola? I'm heading to Texas for xmas and was requested by my parental units to bring buttloads of jumbo shrimp and fish since the prices are hiked up in their area.
Sure, he's good to go. If you don't mind debilitating lower intestine cramps, chaffing your chocolate starfish with TP from wiping so much, mild paralysis, and possible respiratory failure, that is. But MM-M-MM, are they tasty.
Is The Steam Shack still around? It was a dive looking place, red in color, off Barancass, I think next to a bridge. Great place. Don't remember if they sold fresh for carry out, but they steamed up the freshest sea chow I have ever had. Just the basics, chased by a Killians.
What's that restaurant down in P-Cola beach, if you got to the light after the bridge, you took a right, and it was on the right? I know it's off topic, but man do I miss their stuffed grouper...
Shrimp tend to decompose faster than other forms of seafood... Hence the reason why roadside vendors are a bad idea, and you should probably stick with a known quantity like Joe Patti's. Transporting them to Texas, here's my technique (actually works for all forms of fish) - put them in a Ziploc freezer bag (about half full), and fill it the rest of the way with bottled (or filtered) water. Put it in the freezer until it's a solid block. This prevents freezer burn, and also eliminates almost ALL decomposition. Dethawing is done by placing in the fridge until liquid again (preferred manner) or placing in a sink filled with cool water. That's about the only way that your family gets the freshest gulf coast seafood possible, and doesn't get sick. By the way, it's also a good idea if you get a really good deal on seafood and want to store it for a long time.
Oh, and just a rule of thumb - unless you live within 20 minutes or so of the ocean/gulf, you're really better off buying frozen shrimp than fresh... A lot of people (most mass market stores) don't understand how quickly shrimp decompose. And in case you guys haven't figured it out by now - I don't fvck around when it comes to cooking!
Yes - you're right! Every time the folks came to visit when I was in flight school, I'd take them there... Some of the best seafood I could find. Maybe I shouldn't go to VMR-1, maybe I should go to P-Cola...
