Is there still such a thing as Aviation Officer Candidate School, which guarantees a flying slot? I know several naval aviators who went through this program, including my aunt, and was wondering if they still have this program. Also, if not, exactly when do you find out during this process that you have an aviation slot, and is it guaranteed? Or can you be guaranteed a slot before you sign up?

AOCS is gone. OCS is the same for all applicants now. When you apply with an Officer Programs Recruiter, you decide which programs interest you. When that's done, you start the process of determining if you qualify, and whether or not the communities are interested in you.

You do find out what your designator (pilot, nfo, intel, swo, etc...) is before you go to OCS, and that is guaranteed before you go. So, any disqualifying problems that are discovered while in OCS aside, you don't go to there, finish, and then find out what you'll be doing for the Navy. It's just a matter of getting that spot in the first place....
