So for those of us whose first time this is, anyone care to explain how this proceeds. What happens next, and roughly when, and then after that? How many typically are selected out of the number of applicants that posted?

Board stats aren't regularly released. The last board with public stats had about a 60% acceptance rate or something. The last SNA/SNFO board released results about a week after the board date (or at least started to, judging from the thread). Once you get a professional recommendation, you're waiting on an OCS class date and a final select letter to arrive in the mail.

It seems like September OCS classes are still filling up, so I guess that could be the earliest? I don't really know.

Seeing the threads from other boards, we wait anywhere from a week to a month for a word. If you don't hear anything, give your NOR a call. Take it from somebody who used to worry about this a whole bunch: Push it out of your mind. Have a backup plan if you think it's necessary. There's nothing more we can do. The Navy needs SNAs and SNFOs, and some of us will be called upon to meet that need. Hope for the best, then forget about it and do something more enjoyable than fretting.
