I know that you have to take naval science classes in NROTC but what else do you do aside from physical training and summer cruises?

This is a C&P short answer to your question.

When you arrive at your unit, you will be required to take a course load comparable to that of most full-time college students. These courses vary depending on the major you select. However, your education is augmented with naval science courses that will thoroughly prepare you for all aspects of Navy and Marine Corps life.

In addition to academic courses, midshipmen learn military courtesies and protocol. Midshipmen are required to wear uniforms for weekly naval science lab periods and for battalion activities that include formal drill, military science presentations, leadership seminars, career information forums and practical sessions in naval science course work. During the summer, midshipmen take part in summer cruises. This is a unique opportunity for midshipmen to spend four to six weeks each year stationed aboard ships or submarines, with aircraft squadrons or in the field with Marine Corps units. Summer cruises offer midshipmen an opportunity to get a taste of military life and receive information regarding future service selection in surface ships, nuclear submarines, aviation, special warfare or the Marine Corps.
