When you select platform out of primary, are you going against guys from both Whiting and Corpus, or just one of the two?

Concur, there were at least 12 in the class I sat in with when going through the FITU.

So across 5 primary squadrons + Vance (for SNA; I don't know how many NFO primary squadrons there are) there could be anywhere from 30 to 70 other people selecting at the same time?

It's possible, yes. Sometimes one squadron can put out 7+ dudes, sometimes only one or two, and they might be CG, so it really varies. Navy only competes against Navy and Marines, and even then, there's caveats, like Marine prop is "different" from Navy Maritime, even though they go to the same place.

You might not necessarily compete with guys from your class. I caught up to the class ahead of me in 2 months, while other guys in my class are being caught by the one behind us.
