I'm personally a fan of easy stir fries. Chop up a chicken breast and soak it in a mixture of white vinegar, low sodium soy sauce, and a little sugar and ginger. Let it sit for a couple minutes, stir fry it with a tiny bit of oil, throw in whatever veggies you please. Put over whole-grain rice and you've got yourself a quick, healthy meal. Depending on where you get your meat/veggies it can be pretty cheap too.
